Ingredients
2 cups grilled chicken
2 cups apples (diced)
1 cup celery (diced)
1 cup grapes (halved)
½ cup toasted walnuts (chopped)
½ cup craisins
¼ cup shallots (finely chopped)
1 tablespoon Sugarman’s Pure Organic Maple Syrup
2 teaspoons lemon juice
½ cup whipping cream
¼ cup mayonnaise
½ teaspoon kosher salt
Loose leaf lettuce greens to taste (you do not need to serve Waldorf Salad with lettuce)
Directions
Add diced apples to a large bowl and coat with lemon juice. To the same bowl add chicken, celery, grapes, walnuts, craisins, and shallots. In another bowl, whip the whipping cream until peaks form; then fold in the mayonnaise gently. Add the mayonnaise and whipping cream sauce to the larger bowl with the apples, chicken, celery, and rest of the ingredients. Lastly, add Sugarman’s Pure Organic Maple Syrup and salt to taste and mix. Chill the contents for 1 hour or overnight. Serve with a bed of lettuce or by itself.
